Back To School Recipe: Barbecue Jack Chicken
Where did the summer go? If you’re like us, you can’t believe the season is already almost over and are scrambling to get the kids ready to go back to school. You know that the start of the school year means increased busyness, but that doesn’t mean you have to stress! To ease your transition back to school, we want to help you find easy recipes to make at least one part of the day—dinnertime—easier. Put a quick, nutritious, and tasty meal on the table with this back to school recipe for barbecue jack chicken. To make it, you’ll need:
- 4 6-ounce boneless skinless chicken breast halves
- 4 slices of pepper jack cheese
- 1 cup of barbecue sauce
Preheat your grill or broiler to medium.
In each chicken breast, cut a pocket by slicing into the breast but leaving three sides connected. Fill each breast with a piece of the pepper jack cheese and use a toothpick to close the breast over the cheese.
Grill the chicken with the grill lid closed or broil 4 inches from your heat source until the chicken is done (about seven minutes each side). As the chicken cooks, baste it with your barbecue sauce. Toss out the toothpicks and serve!
