Put a quick, nutritious, and tasty meal on the table with this back to school recipe for barbecue jack chicken. To make it, you'll need:
- 4 6-ounce boneless skinless chicken breast halves
- 4 slices of pepper jack cheese
- 1 cup of barbecue sauce
Preheat your grill or broiler to medium.
In each chicken breast, cut a pocket by slicing into the breast but leaving three sides connected. Fill each breast with a piece of the pepper jack cheese and use a toothpick to close the breast over the cheese.
Grill the chicken with the grill lid closed or broil 4 inches from your heat source until the chicken is done (about seven minutes each side). As the chicken cooks, baste it with your barbecue sauce. Toss out the toothpicks and serve!
