Cilantro-Lime Chicken with Avocado Salsa

Cilantro-Lime Chicken with Avocado Salsa
What you will need:
Chicken:
- 2 Tablespoons of Minced Fresh Cilantro
- 2 ½ Tablespoons of Fresh Lime Juice
- 1 ½ Tablespoons of Olive Oil
- 4 Skinless, Boneless Chicken Breasts - Halved
- ¼ Teaspoon of Salt
- Cooking Spray
Salsa:
- 1 Cup of Chopped Plum Tomato (Approximately 2 Tomatoes)
- 2 Tablespoons of Finely Chopped Onions
- 2 Teaspoons of Fresh Lime Juice
- ¼ Teaspoon of Salt
- 1/8 Teaspoon of Freshly Ground Black Pepper
- 1 Avocado, Peeled & Finely Chopped
How to prepare:
- Start by preparing the chicken and combining the first four ingredients in a large bowl - toss, and let stand for three minutes.
- Remove the chicken from your prepared marinade and sprinkle the chicken with salt.
- Heat a grill pan over medium heat and coat the pan with cooking spray. Cook the chicken in the pan for about six minutes on each side.
- To begin the salsa, combine the tomato and following four ingredients together in medium bowl. Once mixed well, add the avocado and stir gently. Serve the salsa over the chicken and enjoy!
